Welcome to Irish Kobe Wagyu - The Home of Japanese Black Wagyu.

Irish Kobe Wagyu is the name given to our herd of full blood Japanese Black Wagyu cattle.

The herd is based in Ireland in the Counties of Armagh and Louth among the picturesque Ring of Gullion.

We are establishing the very best Japanese Black Wagyu Full Blood genetics using embryo transfer technology.

This involves importing the best Embryos & Semen from around the world and transferring them into surrogate heifers on our farm.

This process started in 2005, with the first full blood Wagyu being born in 2007.

The process has continued since then and livestock is registered with the Australian Wagyu Association.

This registration demands DNA verification of all pedigree livestock.

We started to look into Japanese Black Wagyu beef in 2005 after reading about the extraordinary eating qualities of the beef produced by this Japanese breed.

Descriptions of the beef seemed too good to be true, and so in the summer of 2006 we made a trip to Japan to sample the famous beef at source in the city of Kobe.
 

The beef was incredibly tender as a result of the extensive marbling.

The taste was sensational!
 

On coming home, we decided this was the beef we wanted to rear.

As a result of a lot of research and effort, eventually the first consignment of Japanese Black Wagyu embryos from New Zealand were purchased in the winter of 2006.
 

We have continued to import embryos since then and are committed to establishing a significant full blood herd of Japanese Blacks in Ireland.

The word Wagyu refers to all Japanese beef cattle of which there are four different breeds.

One of these breeds known as Japanese Black produce Kobe Beef.

The breed is remarkable and unique because of the amount of marbling in the beef.

Since more marbling means more flavour, Japanese Black Wagyu  Beef is treated like a delicacy all over the world.

 

Wagyu were original used and selected as work animals. This has resulted in a higher amount of intra-muscular fat cells than other cattle -This is seen as marbling in the steak and leads to superior eating qualities.

Wagyu beef has exceptional taste as a result of the softer fat content and it is  a healthier choice of beef.

The Black Wagyu breed produces a higher ratio of unsaturated fats than any other breed.
 

There are three main blood lines in Japanese Black Wagyu:

Tajima or Tajiri
This is the source of the famous 'Kobe beef'. This strain produces highly marbled beef. The cattle have excellent temperament.
 

Fujiyoshi or Shimane
This strain of Black Wagyu produce cattle that are well balanced - not only have the cattle good growth rates but the meat is of good marbling quality as well.
 

Kedaka or Tottori
This strain have good growth rate and have a larger frame than the other strains.
 

The best herds will contain elements from each of the three strains.
 

Irish Kobe Wagyu cattle are bred using all three strains.
